Ingredients For fresh mushroom soup, mom

  • 1 lb
    fresh mushrooms, coarsely chopped
  • 1/2 c
    butter
  • 1
    onion, chopped
  • 1/2 tsp
    salt
  • 1 clove
    garlic, mashed
  • 1/3 c
    flour
  • 1 c
    celery, chopped
  • 1/2 tsp
    worcestershire
  • 2
    carrots, sliced
  • 1/2 tsp
    mustard, dry
  • 6 c
    beef broth
  • 1 c
    white wine

How To Make fresh mushroom soup, mom

  • 1
    Saute mushrooms in 1/4 c butter, set aside. Saute onion and garlic in remaining butter. Blend in salt, mustard and flour. Add Worcestershire, celery, carrots and broth. Cook, stirring constantly until slightly thickened. Lower heat, cook covered 20 min. Strain, add wine and mushrooms to strained broth and heat through.
