This is Mom's adaptation of Pudge Robinson's, a woman who lived in our neighborhood in Aurora (Il).

Ingredients

  • 5 cups onions, sliced
  • 3 tablespoons butter
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 1/4 teaspoon sugar
  • 3 tablespoons flour
  • 2 quarts beef stock, boiling
  • 1/2 cup dry white wine
  • 1 package croutons
  • - grated parmesan cheese

How To Make french onion soup 2, mom

  • Step 1
    Cook onions with butter and oil over low heat in covered 4 quart saucepan for 15 min. Uncover, stir in salt and sugar. Cook 35 min on moderate heat, stirring frequently. Sprinkle with flour, cook 3 min. Remove from heat and blend in beef stock, wine and seasonings. Simmer, partly covered for 35 min. Serve with croutons and chees. Add salt and pepper to taste.
