Better than French onion soup

Ingredients

  • 3 large leeks white portions only cleaned well and sliced
  • 1 large vidalia onions rough chop
  • 1 large red onion rough chop
  • 4 large shallots rough chop
  • 1 bunch scallions white parts only
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 6 cups beef stock
  • 1/2 cup dry sherry
  • 2 teaspoons thyme leaves
  • - salt to taste
  • - shredded mozzarella cheese (optional)

How To Make five onion soup

  • Step 1
    Place the oil in a large stock pot. Add all the onions and cook stirring for about 20 minutes until carmalized. Add the garlic and cook 1 more minute.
  • Step 2
    Add the dry sherry and let most evaporate. Add the stock. With an immersion blender blend the onions a bit to make the soup thicker. Add the thyme.
  • Step 3
    Taste and season with salt. Top with mozzarella cheese if desired.
