Fast and Easy Hot and Sour Soup

I love this soup so fast and easy and delicious

Ingredients

  •   6 c
    chicken stock
  •   6 oz
    shiitake mushrooms thinly sliced
  •   8 oz
    can bamboo shoots drained and cut into matchsticks
  •   8 oz
    soft tofu cut into pieces
  •   4 clove
    garlic minced
  •   1 Tbsp
    ginger minced
  •   2 Tbsp
    balsamic vinegar
  •   3 Tbsp
    rice vinegar
  •   1 Tbsp
    sambal oelek or sriracha sauce
  •   3 Tbsp
    soy sauce
  •   2 Tbsp
    brown sugar
  •   2 Tbsp
    cornstarch mixed with 3 tbsp water
  •   2 large
    eggs beaten
  •   2 tsp
    white pepper
  •   4
    green onions sliced
  •   1/4 c
    cilantro chopped

How To Make

  • 1
    Bring the first 11 ingredients to a boil over high heat. Reduce heat to a simmer and simmer 5 minutes. Add the cornstarch mixed with water and let soup thicken a bit.

    Slowly pour in the eggs in a slow stream while stirring the soup. Stir in the white pepper, green onions and cilantro. Serve
