Ingredients

  • 6 cups chicken stock
  • 6 ounces shiitake mushrooms thinly sliced
  • 8 ounces can bamboo shoots drained and cut into matchsticks
  • 8 ounces soft tofu cut into pieces
  • 4 cloves garlic minced
  • 1 tablespoon ginger minced
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons rice vinegar
  • 1 tablespoon sambal oelek or sriracha sauce
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons cornstarch mixed with 3 tbsp water
  • 2 large eggs beaten
  • 2 teaspoons white pepper
  • 4 - green onions sliced
  • 1/4 cup cilantro chopped

How To Make fast and easy hot and sour soup

  • Step 1
    Bring the first 11 ingredients to a boil over high heat. Reduce heat to a simmer and simmer 5 minutes. Add the cornstarch mixed with water and let soup thicken a bit.
  • Step 2
    Slowly pour in the eggs in a slow stream while stirring the soup. Stir in the white pepper, green onions and cilantro. Serve
