I never would have thought that instant potatoes would work so well as a thickener, but they sure do. This is a nice, easy, creamy soup without all the fat. The recipe is very basic, so you may want to add additional seasonings of your choice.

mixed vegetables, frozen
3 c
2 c
3 Tbsp
onion, instant minced
2 tsp
chicken bouillon granules
2 tsp
1/4 c
celery, finely chopped
1 1/3 c
instant mashed potato flakes

How to Make Fast and Creamy Vegetable Soup


  • 1Cook vegetables according to package directions... but to just UNDER done; drain and set aside.
  • 2Heat to boiling in large saucepan milk, water, minced onion, bouillon granules, salt and celery.
  • 3Remove from heat and stir in instant mashed potato flakes.
  • 4Heat to boiling, stirring constantly.
  • 5Reduce heat to LOW and add in cooked vegetables. Let simmer until veggies are heated through.
