I never would have thought that instant potatoes would work so well as a thickener, but they sure do. This is a nice, easy, creamy soup without all the fat. The recipe is very basic, so you may want to add additional seasonings of your choice.

Ingredients

  • 10 oz
    mixed vegetables, frozen
  • 3 c
    milk
  • 2 c
    water
  • 3 Tbsp
    onion, instant minced
  • 2 tsp
    chicken bouillon granules
  • 2 tsp
    salt
  • 1/4 c
    celery, finely chopped
  • 1 1/3 c
    instant mashed potato flakes

How to Make Fast and Creamy Vegetable Soup

Step-by-Step

  1. Cook vegetables according to package directions... but to just UNDER done; drain and set aside.
  2. Heat to boiling in large saucepan milk, water, minced onion, bouillon granules, salt and celery.
  3. Remove from heat and stir in instant mashed potato flakes.
  4. Heat to boiling, stirring constantly.
  5. Reduce heat to LOW and add in cooked vegetables. Let simmer until veggies are heated through.
