fast and creamy vegetable soup

I never would have thought that instant potatoes would work so well as a thickener, but they sure do. This is a nice, easy, creamy soup without all the fat. The recipe is very basic, so you may want to add additional seasonings of your choice.

Ingredients

  • 10 ounces mixed vegetables, frozen
  • 3 cups milk
  • 2 cups water
  • 3 tablespoons onion, instant minced
  • 2 teaspoons chicken bouillon granules
  • 2 teaspoons salt
  • 1/4 cup celery, finely chopped
  • 1 1/3 cups instant mashed potato flakes

How To Make fast and creamy vegetable soup

  • Step 1
    Cook vegetables according to package directions... but to just UNDER done; drain and set aside.
  • Step 2
    Heat to boiling in large saucepan milk, water, minced onion, bouillon granules, salt and celery.
  • Step 3
    Remove from heat and stir in instant mashed potato flakes.
  • Step 4
    Heat to boiling, stirring constantly.
  • Step 5
    Reduce heat to LOW and add in cooked vegetables. Let simmer until veggies are heated through.
