I never would have thought that instant potatoes would work so well as a thickener, but they sure do. This is a nice, easy, creamy soup without all the fat. The recipe is very basic, so you may want to add additional seasonings of your choice.

Ingredients
- 10 ounces mixed vegetables, frozen
- 3 cups milk
- 2 cups water
- 3 tablespoons onion, instant minced
- 2 teaspoons chicken bouillon granules
- 2 teaspoons salt
- 1/4 cup celery, finely chopped
- 1 1/3 cups instant mashed potato flakes

Step 1Cook vegetables according to package directions... but to just UNDER done; drain and set aside.

Step 2Heat to boiling in large saucepan milk, water, minced onion, bouillon granules, salt and celery.

Step 3Remove from heat and stir in instant mashed potato flakes.

Step 4Heat to boiling, stirring constantly.

Step 5Reduce heat to LOW and add in cooked vegetables. Let simmer until veggies are heated through.
