I was pregnant and hungry for potato soup but couldn't find a recipe that had all the things I wanted so I gathered what I was craving and came up with this, and its a fave of all my friends and family now! Its a great stick to your tummy soup

3 large
carrots, chopped
3 large
celery stalks, chopped
10 c
chicken base (to taste)
salt and pepper (to taste)
1 small
white onion
minced garlic (to taste)
1 lb
thick cut bacon, cut into tiny peices
5-6 large
russet potatoes
2 can(s)
cheddar cheese soup
sour cream

How to Make Everything Potato Soup


  • 1In a large pot, pan fry carrots, celery, onions, garlic, salt and pepper till vegs are slightly softened.
  • 2Add water and bring to boil.
  • 3Pan fry cut up bacon and add to mixture.
  • 4Add Chicken base to taste.
  • 5Peel and cube potatoes and add to boiling water.
  • 6Let boil till all vegs are soft, and most water is boiled down. (mixture should be thick and starchy looking)
  • 7Reduce heat, add cheddar soup and slowly heat back to almost boiling.
  • 8Serve in bowls with a tablespoon or so of Sour cream!
