I was pregnant and hungry for potato soup but couldn't find a recipe that had all the things I wanted so I gathered what I was craving and came up with this, and its a fave of all my friends and family now! Its a great stick to your tummy soup

Ingredients

  • 3 large carrots, chopped
  • 3 large celery stalks, chopped
  • 10 cups water
  • - chicken base (to taste)
  • - salt and pepper (to taste)
  • 1 small white onion
  • - minced garlic (to taste)
  • 1 pound thick cut bacon, cut into tiny peices
  • 5-6 large russet potatoes
  • 2 cans cheddar cheese soup
  • - sour cream

How To Make everything potato soup

  • Step 1
    In a large pot, pan fry carrots, celery, onions, garlic, salt and pepper till vegs are slightly softened.
  • Step 2
    Add water and bring to boil.
  • Step 3
    Pan fry cut up bacon and add to mixture.
  • Step 4
    Add Chicken base to taste.
  • Step 5
    Peel and cube potatoes and add to boiling water.
  • Step 6
    Let boil till all vegs are soft, and most water is boiled down. (mixture should be thick and starchy looking)
  • Step 7
    Reduce heat, add cheddar soup and slowly heat back to almost boiling.
  • Step 8
    Serve in bowls with a tablespoon or so of Sour cream!
