Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup chopped shallots
  • 4 cloves garlic, minced
  • 4 cups vegetable or chicken stock
  • 1 tablespoon soy sauce
  • 12 ounces frozen shelled edamame
  • 3 cups spinach
  • 0 - salt and pepper, to taste
  • 1/4 cup creme fraiche
  • 2 - scallions, chopped

How To Make edamame soup

  • Step 1
    Add the olive oil to a soup pot and add the shallots and garlic, and cook until fragrant, about 2 minutes. Add the broth, soy sauce, and edamame. Bring to a boil and reduce to a simmer.
  • Step 2
    Simmer for 20 minutes. Add the spinach and cook 1 minute. Taste and season with salt and pepper.
  • Step 3
    Process in a food processor in batches if needed until smooth.
  • Step 4
    Top with creme fraiche and scallions.
