Ingredients
- 1 tablespoon olive oil
- 1/4 cup chopped shallots
- 4 cloves garlic, minced
- 4 cups vegetable or chicken stock
- 1 tablespoon soy sauce
- 12 ounces frozen shelled edamame
- 3 cups spinach
- 0 - salt and pepper, to taste
- 1/4 cup creme fraiche
- 2 - scallions, chopped
How To Make edamame soup

Step 1Add the olive oil to a soup pot and add the shallots and garlic, and cook until fragrant, about 2 minutes. Add the broth, soy sauce, and edamame. Bring to a boil and reduce to a simmer.

Step 2Simmer for 20 minutes. Add the spinach and cook 1 minute. Taste and season with salt and pepper.

Step 3Process in a food processor in batches if needed until smooth.

Step 4Top with creme fraiche and scallions.
