22new potatoes (10 pounds)
6 Tbspolive oil
4 can(s)(10 3/4oz each) cheddar cheese soup,undiluted
2 pkg(1.15 oz each) dry onion soup mix
1 cslice green onions
How to Make Easy Vegetable Chowder
- Cut potatoes into 1/2 inch cubes and carrots into 1/2 inch slices; coarsely chop onion.
- Saute veggies in hot oil in Dutch oven until tender
- Stir together Cheddar cheese soup, water, soup mix and pepper until blended; add to vegetable mixture. Bring to a boil; reduce heat and simmer for 30 minutes. Stir in 1 cup sliced green onions and remove from heat. Cool; package in 3 quart size jars for gift giving or just do what you please. Can be chilled for up to 24 hours.
