easy peasy beef vegetable soup

This is for people that like the taste of homemade soup without all the vegetable prep time.

Ingredients

  • 1 to 1 1/2 pounds stew beef
  • 1 can peas, canned
  • 1 can corn, canned
  • 1 can carrots, canned
  • 2 cans potatoes,canned
  • 1 can tomatoes large canned
  • 1 can large size mixed vegetables(prefer veg all brand)
  • 1 small cabbage head
  • 2 tablespoons vegetable or canola oil
  • 3 - bay leaves, dried
  • 2 tablespoons beef bouillon powder
  • 1 tablespoon coarse ground black pepper
  • 1 stick cellery
  • 2 teaspoons cellery seed
  • 1 can v8 11.5 oz. can
  • fluid water, as needed

How To Make easy peasy beef vegetable soup

  • Step 1
    brown 1 to 1&1/2 lbs of stew beef in the oil. add tomatoes and 1&1/2 cups of cleaned chopped celery leaves and all. Allow to simmer 20 minutes. Add the rest of the ingredients except the cabbage and cook on medium for 1 hr. After an 1 hr. add 2 to 3 cups of chopped cabbage and extra water as needed to make sure that the cabbage is covered so that it will cook to tender. On medium heat boil an additional 1/2 hr. until the cabbage is tender. Turn on simmer for the last 1/2 hr. Remove bay leaves and serve. For a little more spice to your serving add some extra pepper.
