I was tempted not to add the canned chicken when creating this recipe, but so glad I did.

Ingredients

  • 1 - yellow onion, diced
  • 2 cans white shoe peg corn, don't substitute
  • 2 cans progresso minestrone soup
  • 1 large can of small diced veg all mixed vegetables
  • 2 cans black beans, rinsed
  • 1 can chopped green chiles
  • 2 boxes large boxes of swanson chicken broth
  • 2 cans large cans of white chicken meat (make sure it is white meant)
  • 3 packages williams white chile mix or mccormick if you can't find williams
  • 1 can petite diced tomatoes

How To Make easy lowfat vegetable soup

  • Step 1
    Dice onion and sauté it in small about of cooking oil. Use pot soup will be made in.
  • Step 2
    Add Chicken broth boxes, 2 cans corn, 2 cans Progresso Minestrone, 1 can Veg All, 2 rinsed cans of black beans, and the can of petite diced tomatoes and green chiles. Do not drain any of the cans, except for rinsing the black beans.
  • Step 3
    Add 3 packages of white chili mix. Bring to boil and simmer for 1/2 hour. Even better the second day.
