easy amazing tomato soup

I made this soup creamy by adding heavy cream, which I think I will leave out next time because I prefer the taste of the soup to that of the cream.

Ingredients For easy amazing tomato soup

  • 1/4 c
    olive oil
  • 4 clove
    garlic, minced
  • 1 md
    onion, diced
  • 1 tsp
    dried oregano
  • 2 tsp
    salt
  • 1/3 c
    tomato paste
  • 1/2 c
    dry white wine
  • 28 oz
    can crushed tomatoes
  • 2 c
    chicken stock
  • 1 Tbsp
    honey
  • 4 Tbsp
    heavy cream (optional)

How To Make easy amazing tomato soup

  • 1
    Place the oil in a pot. Add the garlic and onion and cook until the onion is translucent. Add the oregano and salt.

    Make a well. Add the tomato paste and cook for 5 minutes. Add the wine and let cook until most evaporates.

    Add the crushed tomatoes and chicken stock. Simmer for 15 minutes. Add the honey. Taste and adjust for salt and pepper.

    Transfer to a food processor and process until smooth.
  • 5
    Pass through a fine mesh strainer pressing the solids. Place back into the pot and add the heavy cream if using. Enjoy
