I have made many different types of soups, however this is the easiest carrot soup I have ever made.

Ingredients

  • 5-6 cups chopped carrots
  • 1 medium chopped onion
  • 1 stalk chopped celery
  • 2 dashes garlic powder
  • 6-8 cups reduced sodium chicken broth
  • 1/2 cup half and half
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 2-3 tablespoons honey

How To Make easiest carrot soup ever

  • Step 1
    Heat 1 Tbs butter and 1 Tbs oil in a Dutch oven. Add onion and celery and cook 4 to 6 minutes.
  • Step 2
    Stir in carrots and sauté for two or three minutes. Add the low sodium chicken broth. Bring to a boil over high heat. Reduce heat and simmer for about 25 minutes.
  • Step 3
    Use immersion blender to purée the soup until smooth. Stir in the optional half-and-half salt and pepper and honey.
