i lov soups im the cooler temp parts of the yr plus i am workin on writin an all soups cookbook so u will see lots of soups comin from me for awhile hope u like them as much as i do

2 medium
red potatoes,skin on rough chop
2 medium
baking potatoes,skin on rough chop
2 medium
any other kind potatoes,skin on rough chop
1/2 lb
bacon, uncooked
1/4 lb
ham,cubed small
1/4 lb
pork sausage, mild
1 medium
red onion,chopped
1 bunch
green onions,chopped
1 medium
carrot, shredded
2/3 c
frozem mixed bell peppers[red,green and yellow]
1/2 pkg
[5 oz] baby spinach leaves
salt and pepper [to taste]
1 qt
1 qt
1 pt
sour cream
instant mashed potat flakes[as needed to make soup thickness u like]


1prep all veggies put cut potatoes in the qt of water set aside
2cut bacon into small pieces fry til crisp remove bacon to paper towel lined plate add sausage to grease fry til no longer pink add to plate with bacon add ham cook til browned add to plate of meats
3drain potates from water[keep water] add them to grease cook til browned[does not have to be tender] add the rest of the veggies except the spinach cook making sure all if coated with grease
4now into lg soup pan add veggies and water[add more water if not covered] cook 30 min til veggies are tender add plate of meat cook 15 min more add milk and sour cream heat til hot add spinach cook til it wilts stir well now add potato flakes til soup is thickness u like now also add salt and pepper to taste
