This is another recipe from the May 13, 1980 Woman's Day, "The Collector's Cookbook" that I found in my mother's recipe drawer.

It sounds wonderful to me!!

Ingredients

  • 1 pkg
    10 oz frozen green peas, thawed
  • 2 Tbsp
    butter, softened
  • 1 small
    onion, cut up
  • 1 clove
    garlic, halved
  • 2 - 3 tsp
    curry powder
  • 1/2 tsp
    dry mustard (or 1 tsp prepared)
  • 2 c
    chicken broth, divided
  • to taste
    salt and pepper

How to Make Curried Pea Soup

Step-by-Step

  1. In a blender or food processor whirl peas, onion, garlic, curry powder, mustard, 1/2 cup broth, salt and pepper until smooth.
  2. In saucepan combine puree with remaining 1 1/2 cups broth and the butter.
  3. Simmer 10 to 15 minutes to heat through and blend flavors. Makes 4 servings.
