curried pea soup

This is another recipe from the May 13, 1980 Woman's Day, "The Collector's Cookbook" that I found in my mother's recipe drawer. It sounds wonderful to me!!

Ingredients

  • 1 package 10 oz frozen green peas, thawed
  • 2 tablespoons butter, softened
  • 1 small onion, cut up
  • 1 clove garlic, halved
  • 2 - 3 teaspoons curry powder
  • 1/2 teaspoon dry mustard (or 1 tsp prepared)
  • 2 cups chicken broth, divided
  • to taste - salt and pepper

How To Make curried pea soup

  • Step 1
    In a blender or food processor whirl peas, onion, garlic, curry powder, mustard, 1/2 cup broth, salt and pepper until smooth.
  • Step 2
    In saucepan combine puree with remaining 1 1/2 cups broth and the butter.
  • Step 3
    Simmer 10 to 15 minutes to heat through and blend flavors. Makes 4 servings.
