  • 1 large
    head of broccoli, chopped
  • 2 clove
    garlic, chopped
  • 2
    medium onions,chopped
  • 5 c
    chicken or vegetable broth
  • 1 Tbsp
  • 1 tsp
    curry powder
  • 1/4 tsp
    orange zest
  • 8 oz
    plain nonfat yogurt

  • 4
    heaping teaspoons more yogurt for garnish

How to Make Curried Broccoli Soup


  1. Put first 5 ingredients in a large pot. Simmer for 30 minutes. Add curry and orange zest and simmer an additional 5 minutes. Transfer to blender or processor and puree, adding plain nonfat yogurt. Serves 4-6.
  2. Garnish soup with a teaspoon of yogurt, if desired.
