I threw this soup together one evening after work. I wanted something I could take to work for my lunch without a lot of fuss. It turned out wonderful. Everyone at work was asking why I didn't bring in the whole pot. LOL! Enjoy!

Ingredients

  • 2 1/2 pounds potatoes, peeled and cubed . 1/2 inch
  • 2 - carrots. sliced thin - i use my mandolin
  • 2 medium onion, diced
  • 2 - celery stalks, sliced thin
  • 1 1/2 teaspoons basil
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon pepper
  • 30 ounces chicken broth
  • 1/3 cup flour
  • 1 1/2 cups half n half
  • 3/4 - package real bacon bits or crumbled crisp bacon - could also add cubed, cooked ham

How To Make ~ crock pot potato soup ~ easy

  • Step 1
    Combine the first 8 ingredients in a 4 - 5 quart crock pot. Stir and cook on high for 3 - 3 1/2 hours or until vegetables are tender.
  • Step 2
    In a container with a lid, shake together the half and half and flour. Stir this mixture and bacon into the soup and cook another 30 - 45 minutes. Taste and adjust seasonings according to taste.
  • Step 3
    Serve with favorite condiments, such as sliced green onions and sour cream.
