I threw this soup together one evening after work. I wanted something I could take to work for my lunch without a lot of fuss. It turned out wonderful. Everyone at work was asking why I didn't bring in the whole pot. LOL! Enjoy!

Ingredients For ~ crock pot potato soup ~ easy

  • 2 1/2 lb
    potatoes, peeled and cubed . 1/2 inch
  • 2
    carrots. sliced thin - i use my mandolin
  • 2 md
    onion, diced
  • 2
    celery stalks, sliced thin
  • 1 1/2 tsp
    basil
  • 1 1/4 tsp
    salt
  • 1/2 tsp
    pepper
  • 30 oz
    chicken broth
  • 1/3 c
    flour
  • 1 1/2 c
    half n half
  • 3/4
    package real bacon bits or crumbled crisp bacon - could also add cubed, cooked ham

How To Make ~ crock pot potato soup ~ easy

    Combine the first 8 ingredients in a 4 - 5 quart crock pot. Stir and cook on high for 3 - 3 1/2 hours or until vegetables are tender.

    In a container with a lid, shake together the half and half and flour. Stir this mixture and bacon into the soup and cook another 30 - 45 minutes. Taste and adjust seasonings according to taste.

    Serve with favorite condiments, such as sliced green onions and sour cream.
