- 1 - chopped onion
- 1/4 cup butter
- 3 - potatoes, peeled and chopped
- 3 - zucchinis, chopped
- 1 - head broccoli, chopped
- 2 quarts vegetable broth
- 2 - red potatoes, shredded
- 3 - minced garlic cloves
- 1 can cream-style corn
- 1 teaspoon celery seed
- 1 teaspoon cumin
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 cups light cream

Step 1Place all ingredients in a 4 to 5 quart crockpot except the cream.

Step 2Cook on the low setting 6 to 8 hours or until sweet potatoes are tender.

Step 3Ten minutes before serving, add the cream, if using.
