Creamy Pumpkin Soup

This soup is a combination of fruit and vegies and it can be made with canned pumpkin or use raw pumpkin cooked and mashed.but the canned is very good and less fuss.

Ingredients

    onion s chopped
  • 2 Tbsp
    butt
  • 4 c
    chicken or vegetable broth
  • 2 c
    peeled and chopped potatoes
  • 2
    apples, peeled and rough chopped
  • 1 can
    15oz solid packed pumpkin
  • 2 c
    milk
  • 1/2 tsp
    nutmeg
  • 1 c
    sour cream
  • 1 Tbsp
    chopped fresh parsley
  • 1 Tbsp
    grated fresh ginger
  • 4 slice
    side bacon fried crisp and crumbled

How To Make

    In large saucepan fry onion in butter until tender add the broth and potatoes, apples and pumpkin and cook until potatoes are tender about 15 to 20 minutes.Remove and cool slightly...Puree and return to pot and add the ginger and simmer another 5 minutes.

    In small bowl, combine the sour cream and parsley..Spoon soup into bowls and top with dollop of sour cream and sprinkle with crisp bacon.
