Ingredients
- 1 - medium onion, chopped
- 2 tablespoons butter
- 2 cans chicken broth
- 2 cups sliced, peeled potatoes
- 2 cups canned pumpkin
- 2 1/2 cups milk
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup sour cream
How To Make creamy pumpkin soup

Step 1In a large saucepan, saute onions in butter until tender. Add broth, potatoes and pumpkin and cook until potatoes are tender, about 15 minutes.

Step 2remove from heat and allow to cool. puree half of the mixture at a time until smooth, and return all to pan.

Step 3Add milk, nutmeg, salt and pepper, and heat through. Spoon soup into bowls and top each with a dollop of sour cream.
