Ingredients

  • 1 - medium onion, chopped
  • 2 tablespoons butter
  • 2 cans chicken broth
  • 2 cups sliced, peeled potatoes
  • 2 cups canned pumpkin
  • 2 1/2 cups milk
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup sour cream

How To Make creamy pumpkin soup

  • Step 1
    In a large saucepan, saute onions in butter until tender. Add broth, potatoes and pumpkin and cook until potatoes are tender, about 15 minutes.
  • Step 2
    remove from heat and allow to cool. puree half of the mixture at a time until smooth, and return all to pan.
  • Step 3
    Add milk, nutmeg, salt and pepper, and heat through. Spoon soup into bowls and top each with a dollop of sour cream.
