  • 6 slice
    bacon, sliced and cooked
  • 16 oz
    frozen shredded hash browne potatoes
  • 1 can(s)
    cream of potato soup
  • 2 c
    chicken broth
  • 2
    leeks,white and some green parts,cut 1/4 inch pc
  • 2 stalk(s)
  • 1 c
    half and half
  • 1/2 c
    sour cream, lite (optional)

How to Make Creamy Leek and Potato Soup


  1. Combine all the ingredients in the crock pot, except for the bacon and sour cream.Cover and cook on high for 3-4 hours.
  2. Just before serving, stir in sour cream.Serve with crumbled bacon and parsley.You can sprinkle some cheddar or your favorite cheese to serve.
