This is my family's favorite soup.It's really tasty and comforting.

Ingredients

  • 6 slices bacon, sliced and cooked
  • 16 ounces frozen shredded hash browne potatoes
  • 1 can cream of potato soup
  • 2 cups chicken broth
  • 2 - leeks,white and some green parts,cut 1/4 inch pc
  • 2 stalks celery,sliced
  • 1 cup half and half
  • 1/2 cup sour cream, lite (optional)

How To Make creamy leek and potato soup

  • Step 1
    Combine all the ingredients in the crock pot, except for the bacon and sour cream.Cover and cook on high for 3-4 hours.
  • Step 2
    Just before serving, stir in sour cream.Serve with crumbled bacon and parsley.You can sprinkle some cheddar or your favorite cheese to serve.
