I have been looking for a cabbage soup recipe since my cousin Robin made one when we lived at Grandma's house together (no, dates aren't happening, suffice it to say a LONG time ago). She lost the recipe, so people have been sharing recipes. This one is Barb's.

Ingredients

  • 3/4 cup chopped onion
  • 3/4 cup thinly sliced celery
  • 1/2 cup flour
  • 8 cups chicken broth (she uses fat free)
  • 4 cups shredded cabbage
  • 1/2 cup chopped green chilies (she uses the can and drains sauce)
  • 12 ounces polish sausage, cooked (see notes)
  • 1 teaspoon fresh parsley
  • 1/4 teaspoon ground white pepper

How To Make creamy cabbage soup, barb

  • Step 1
    Put a saucepan or DO (dutch oven) over med heat and spray with pam. Saute onion and celery until tender. Stir flour in, then slowly stir in chicken broth. Add cabbage and chopped chilies (she used the little can of chopped chilies, but drained the sauce). Stir, until soup is slightly thickened. Lower heat to simmer for 3-4 min, uncovered. Stir sausage and parsley in, then add pepper. Simmer 2-3 min until heated through.
  • Step 2
    NOTE: you could also use smoked sausage if you prefer. She cooks it, then slices it into diagonal shaped rounds.
