Looking for something for all those abundant zucchini this summer?? This soup is amazing, and perfect for a chilly summer night..here in New England we have PLENTY of those!! Enjoy!

Ingredients

  • 1 quart chicken stock
  • 4 medium stalks of celery..chopped
  • 2 medium carrots chopped
  • 1 medium chopped onion
  • 4 medium zucchini sliced
  • 3 ounces cream cheese
  • 2 tablespoons butter

How To Make cream of zucchini soup

  • Step 1
    Saute onions in butter until soft. Add celery and carrots and chicken stock, and cook until tender, about half an hour. Add zucchini and cook another 5-10 minutes. Place in blender, add cream cheese and puree. Salt and pepper to season.
