This creamy soup is a wonderful way to get your veggies in. I made a quick batch to take to my moms for lunch...as she loves it. It's also a quick soup to throw together, which is always a plus. You can use whatever vegetables you like, I just like the sweetness of the carrots with the broccoli and cauliflower. Enjoy!

Ingredients

  • 1 - onion, chopped
  • 3/4 cup butter
  • 1/2 cup flour
  • 4 cups 4 cups chicken or vegetable broth
  • 3 cups milk
  • 1 cup whipping cream
  • 1 tablespoon dried basil
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 5 cups vegetables (broccoli, carrots and cauliflower), cooked

How To Make cream of vegetable soup

  • Step 1
    In large kettle, saute onion in butter until tender. Add flour; cook and stir until bubbly. Enjoy with a nice crusty piece of bread. Gradually add chicken broth; cook and stir until thickened, about 5 minutes. Whisk in the milk, cream, basil, salt, pepper, and garlic powder. Add cooked vegetables. Cook gently until heated through. Do not boil.
