This creamy soup is a wonderful way to get your veggies in. I made a quick batch to take to my moms for she loves it. It's also a quick soup to throw together, which is always a plus.

You can use whatever vegetables you like, I just like the sweetness of the carrots with the broccoli and cauliflower.

    onion, chopped
  • 3/4 c
  • 1/2 c
  • 4 c
    4 cups chicken or vegetable broth
  • 3 c
  • 1 c
    whipping cream
  • 1 Tbsp
    dried basil
  • 1 Tbsp
  • 1 tsp
  • 1/2 tsp
    garlic powder
  • 5 c
    vegetables (broccoli, carrots and cauliflower), cooked

How to Make Cream Of Vegetable Soup


  1. In large kettle, saute onion in butter until tender.
    Add flour; cook and stir until bubbly.

    Enjoy with a nice crusty piece of bread.

    Gradually add chicken broth; cook and stir until thickened, about 5 minutes.

    Whisk in the milk, cream, basil, salt, pepper, and garlic powder. Add cooked vegetables. Cook gently until heated through. Do not boil.
