Ingredients

  • 18 - tomatoes, diced
  • 2 each - carrot, finely diced
  • 2 each - onion, finely diced
  • 3 each - garlic, crushed fine
  • 3 each - leeks, finely diced
  • 6 tablespoons butter
  • 3 quarts chicken stock, or chicken water
  • 2 tablespoons white pepper
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 9 tablespoons flour
  • 1 quart heavy cream

How To Make cream of tomato soup

  • Step 1
    Saute until mushy.
  • Step 2
    Saute to make a roux (flour 9 T).
  • Step 3
    Add the chicken stock or chicken base and water, white pepper, salt, and sugar. Bring to a simmer.
  • Step 4
    Add the 1-quart of heavy cream.
  • Step 5
    May need to adjust thickening by adding cornstarch and water.
