    tomatoes, diced
  • 2 each
    carrot, finely diced
  • 2 each
    onion, finely diced
  • 3 each
    garlic, crushed fine
  • 3 each
    leeks, finely diced
  • 6 Tbsp
  • 3 qt
    chicken stock, or chicken water
  • 2 Tbsp
    white pepper
  • 1 Tbsp
  • 1 Tbsp
  • 9 Tbsp
  • 1 qt
    heavy cream

How to Make Cream of Tomato Soup


  1. Saute until mushy.
  2. Saute to make a roux (flour 9 T).
  3. Add the chicken stock or chicken base and water, white pepper, salt, and sugar. Bring to a simmer.
  4. Add the 1-quart of heavy cream.
  5. May need to adjust thickening by adding cornstarch and water.
