Ingredients
- 18 - tomatoes, diced
- 2 each - carrot, finely diced
- 2 each - onion, finely diced
- 3 each - garlic, crushed fine
- 3 each - leeks, finely diced
- 6 tablespoons butter
- 3 quarts chicken stock, or chicken water
- 2 tablespoons white pepper
- 1 tablespoon salt
- 1 tablespoon sugar
- 9 tablespoons flour
- 1 quart heavy cream
How To Make cream of tomato soup

Step 1Saute until mushy.

Step 2Saute to make a roux (flour 9 T).

Step 3Add the chicken stock or chicken base and water, white pepper, salt, and sugar. Bring to a simmer.

Step 4Add the 1-quart of heavy cream.

Step 5May need to adjust thickening by adding cornstarch and water.
