How to Make cream of sweet potato and curry
- saute onion in some margarine and add sweet potatoes, water, soup base, curry bring to a boil and then simmer until tender
- set off stove and puree, cool and finish the soup next day.
- Next day , add cream, bring to a boil, turn down and simmer and thicken with standard amount of roux, let simmer for 20 min, or longer and serve
