Ingredients

  • 12 - sweet potato
  • 1 tablespoon curry
  • 1 - onion chopped
  • 2 cups chicken soup base
  • 16 liters water
  • 1 liter 18% cream

How To Make cream of sweet potato and curry

  • Step 1
    saute onion in some margarine and add sweet potatoes, water, soup base, curry bring to a boil and then simmer until tender
  • Step 2
    set off stove and puree, cool and finish the soup next day.
  • Step 3
    Next day , add cream, bring to a boil, turn down and simmer and thicken with standard amount of roux, let simmer for 20 min, or longer and serve
