A yummy lunch or dinner soup. Reheats nicely in the microwave a cup at a time. Add Pepperidge Farm Goldfish to make it even tastier.

Ingredients For cream of spinach and broccoli soup

  • 4 c
    vegetable broth
  • 1 md
    russet potato, peeled and diced
  • 12 oz
    frozen spinach, thawed
  • 1 c
    frozen broccoli, thawed

How To Make cream of spinach and broccoli soup

    Combine vegetable broth and the potato in a saucepan. Bring to a boil. Lower heat and simmer about 15 minutes until the potato becomes soft.

    Add the spinach and broccoli. Bring to a boil. Lower heat and simmer 10 minutes.

    Blend with an immersion blender until smooth. Enjoy!
