I loved making this soup when I was younger. Then I went to a bazaar where loaded potato soup was being served. So I added the options to the original recipe in case you want to make it loaded potato soup!

Ingredients

  • 1 3/4 cups mashed cooked potatoes
  • 1 1/2 cups chicken broth
  • 1 tablespoon margarine
  • 1 tablespoon flour
  • 1/8 teaspoon salt
  • dash pepper
  • 1 cup milk
  • 1/4 teaspoon dried dill
  • OPTIONS: TO MAKE LOADED POTATO SOUP
  • - cooked potato chunks, not mashed
  • - fried bacon for topping
  • - cheese for topping
  • - green onions, diced

How To Make cream of potato soup

  • Step 1
    In blender combine chicken broth and potatoes. Cover and blend 1 min or until smooth. Set aside. In med saucepan melt margarine, stir in flour and seasonings. Add milk all at once. Cook and stir until slightly thickened. Cook 1 min more. Stir in vegetable mixture and remaining broth. Cook and stir until heated through. If necessary, stir in additional milk to get desired consistency. Season to taste.
