grated cheddar cheese is nice in this soup . to change this soup to Broccoli and cheddar,add 2 bags of broccoli or 5 heads of broccoli instead of cauliflower and follow the same dictations.

Ingredients
- 5 - head of cauliflower, small florets
- 1 large onion, chopped
- 20 liters water
- 2 cups chicken soup base
- 1 quart 18% cream
How To Make cream of cauliflower

Step 1saute onions with a little margarine add cauliflower,add water and soup base, bring to a boil and simmer until cauliflower is tender

Step 2set off stove and puree , cool and finish the soup next day . put on stove bring to a boil and turn down to simmer and thicken with the standard amount of roux, let simmer for a least 20 min. or longer add cream and add cheese stir until melted serve
