came across this one time and thought it sounded wonderful..it was,enough so that in the tea room where i once was employed we served it as part of a special tea we were having.

Ingredients

  • 2 tablespoons oleo
  • 1/2 cup finely chopped onion
  • 1 pound carrots,shredded
  • 1 pound potatoes,shredded
  • 6 cups chicken broth
  • 1/2 teaspoon dried thyme
  • 1 - bay leaf
  • 1/8 teaspoon tabasco
  • 1/2 teaspoon worcestershire sauce
  • 1/2 teaspoon sugar
  • 11/2 cups milk
  • 1-2 cup shredded cheddar
  • - parsley,salt and pepper

How To Make cream of carrot-cheddar soup

  • Step 1
    saute onions in oleo.
  • Step 2
    add and simmer til vegs are tender: carrots,potatoes,chicken broth,thyme,bay leaf,tabasco.w/sauce,sugar and salt and pepper to taste.
  • Step 3
    add,stirring til cheese is melted the milk and cheese.
  • Step 4
    discard bay leaf and sprinkle with parsley
