Ingredients

  • 4-5 medium
    potatoes, cubed
  • 2 c
    carrots, sliced
  • 1/2 c
    celery, chopped
  • 1 c
    onion, chopped
  • ·
    salt to taste
  • 1 1/2 lb
    fresh broccoli, chopped
  • 1/3 stick
    butter or margarine
  • 2 c
    milk
  • 1/2 c
    flour
  • 1/2 tsp
    dried mustard
  • 6
    chicken bouillon cubes dissolved in 2 cups water

How to Make Cream of Broccoli Soup

Step-by-Step

  1. Simmer potatoes, carrots, celery and onion in 2 1/2 Cups water with salt until vegetables are tender. Add broccoli and simmer 7 minutes. Drain water and set aside.
  2. In a separate pan, melt butter. Add milk, flour and mustard. Stir until thick. Add bouillon mixture. Thicken. Add cheese. When cheese is melted add drained vegetables.
