Cream of Broccoli Soup
Ingredients

4-5 mediumpotatoes, cubed

2 ccarrots, sliced

1/2 ccelery, chopped

1 conion, chopped

·salt to taste

1 1/2 lbfresh broccoli, chopped

1/3 stickbutter or margarine

2 cmilk
-
1/2 cflour
-
1/2 tspdried mustard

6chicken bouillon cubes dissolved in 2 cups water
How to Make Cream of Broccoli Soup
- Simmer potatoes, carrots, celery and onion in 2 1/2 Cups water with salt until vegetables are tender. Add broccoli and simmer 7 minutes. Drain water and set aside.
- In a separate pan, melt butter. Add milk, flour and mustard. Stir until thick. Add bouillon mixture. Thicken. Add cheese. When cheese is melted add drained vegetables.
