Ingredients

  • 4-5 medium potatoes, cubed
  • 2 cups carrots, sliced
  • 1/2 cup celery, chopped
  • 1 cup onion, chopped
  • - salt to taste
  • 1 1/2 pounds fresh broccoli, chopped
  • 1/3 stick butter or margarine
  • 2 cups milk
  • 1/2 cup flour
  • 1/2 teaspoon dried mustard
  • 6 - chicken bouillon cubes dissolved in 2 cups water

How To Make cream of broccoli soup

  • Step 1
    Simmer potatoes, carrots, celery and onion in 2 1/2 Cups water with salt until vegetables are tender. Add broccoli and simmer 7 minutes. Drain water and set aside.
  • Step 2
    In a separate pan, melt butter. Add milk, flour and mustard. Stir until thick. Add bouillon mixture. Thicken. Add cheese. When cheese is melted add drained vegetables.
