Ingredients

4-5 medium
potatoes, cubed
2 c
carrots, sliced
1/2 c
celery, chopped
1 c
onion, chopped
salt to taste
1 1/2 lb
fresh broccoli, chopped
1/3 stick
butter or margarine
2 c
milk
1/2 c
flour
1/2 tsp
dried mustard
6
chicken bouillon cubes dissolved in 2 cups water

How to Make Cream of Broccoli Soup

Step-by-Step

  • 1Simmer potatoes, carrots, celery and onion in 2 1/2 Cups water with salt until vegetables are tender. Add broccoli and simmer 7 minutes. Drain water and set aside.
  • 2In a separate pan, melt butter. Add milk, flour and mustard. Stir until thick. Add bouillon mixture. Thicken. Add cheese. When cheese is melted add drained vegetables.
