Cream of Broccoli Soup

1 bunchbroccoli, cut into florets and blanched in microwave
3 Tbsponion, chopped
5 Tbspall purpose flour
1/4 tspkosher salt
dash(es)freshly ground black pepper
dash(es)freshly grated nutmeg
1 cchicken broth
How to Make Cream of Broccoli Soup
- Cook onions in butter. Stir in flour, salt, pepper, nutmeg, milk and chicken broth. Cook until slightly thickened. Add broccoli and heat through.
- I take my submersion blender at this point and blend until smooth. Reserve a little broccoli to serve as a garnish on top.
- If adding cheese, do so after blending. Heat through being careful not to scorch.
