Ingredients

  • 2 tablespoons shallots or onion, finely diced
  • 4 pounds broccoli, chopped, fresh
  • 1 cup butter
  • 1 cup flour
  • 1/2 cup chicken base diluted with 1 1/2 cup of water
  • 1 teaspoon pepper
  • 1 teaspoon thyme, ground
  • 1 gallon milk
  • 2 quarts heavy cream

How To Make cream of broccoli soup

  • Step 1
    Saute until tender (al dente).
  • Step 2
    Add chicken base, white pepper, thyme, and milk.
  • Step 3
    Add heavy cream. NOTE: May need to adjust by adding cornstarch and water.
