Ingredients
- 2 tablespoons shallots or onion, finely diced
- 4 pounds broccoli, chopped, fresh
- 1 cup butter
- 1 cup flour
- 1/2 cup chicken base diluted with 1 1/2 cup of water
- 1 teaspoon pepper
- 1 teaspoon thyme, ground
- 1 gallon milk
- 2 quarts heavy cream
How To Make cream of broccoli soup

Step 1Saute until tender (al dente).

Step 2Add chicken base, white pepper, thyme, and milk.

Step 3Add heavy cream. NOTE: May need to adjust by adding cornstarch and water.
