  • 6 lb
    asparagus, cut into 1/4 length
  • 1/2 lb
  • 1/2 c
    onion, minced
  • 1/2 c
  • 1 gal
  • 1 tsp
    thyme, ground
  • 1 tsp
    white pepper
  • 1/2 tsp
    chicken base diluted with 1/4 cup water
  • 1 qt
    heavy cream

How to Make Cream of Asparagus Soup


  1. Using a very large heavy pot, melt the butter, saute the onion, and add flour to make the roux.
  2. Add the rest of the ingredients, except for the cream. Bring to a near simmer.
  3. Add the cream, bring to a simmer until fully cooked.
