Ingredients
- 6 pounds asparagus, cut into 1/4 length
- 1/2 pound butter
- 1/2 cup onion, minced
- 1/2 cup flour
- 1 gallon milk
- 1 teaspoon thyme, ground
- 1 teaspoon white pepper
- 1/2 teaspoon chicken base diluted with 1/4 cup water
- 1 quart heavy cream

Step 1Using a very large heavy pot, melt the butter, saute the onion, and add flour to make the roux.

Step 2Add the rest of the ingredients, except for the cream. Bring to a near simmer.

Step 3Add the cream, bring to a simmer until fully cooked.
