What's not to love about this soup. It's rich, creamy and perfect on a cold day. I'll sometimes add crumbled bacon or green onions depending on my mood but I always serve with warm French bread for dipping.

- 4 cups chicken broth
- 4 cups potatoes, peeled & cubed
- 1/4 cup minced onion
- 1/2 teaspoon seasoning salt
- 1/4 teaspoon white pepper
- 1/4 - ground red pepper
- 1 package cream cheese, cut into chunks (8 oz)
How To Make cream cheese potato soup

Step 1Combine broth, potatoes, onion, and spices.

Step 2Boil on medium heat until potatoes are tender.

Step 3Smash a few of the potatoes to release their starch for thickening.

Step 4Reduce to low heat.
