This is my favorite soup and when my mother would ask me what I meal I would like for my birthday meal I would always ask her to make me this soup.

Ingredients

1 lb
yellow split peas
1 lb
grated carrots
1 large
yellow onion, diced
1/2 c
cashew,unsalted
8 c
water
2 can(s)
creamed style corn
salt and pepper to taste

Step-By-Step

1In a large pot cook split peas in 7 cups of water until
peas are soft.
2Add carrots,onion,salt and pepper.Cook until veggies are tender.
3In a small pot add a cup of water and the cashews. Bring to a boil. Then pour hot cashew mixture into a blender and liquefy.
4Add to split peas along with cream corn.
5Simmer until flavors blend, stirring often.
6Serve with your favorite crackers or bread.
