This is another recipe from my sister-in-law Marie, and we have been making it for years. It is so easy and just delicious! The bacon fat gives it a great flavor.

yield 6-8 serving(s)

Ingredients

  • 2 tablespoons bacon fat
  • 2 large potatos, diced
  • 2 cans cream style corn
  • 2 cups whole milk
  • 1 can evaporated milk-or enough to equal 2 cups
  • 1 teaspoon salt
  • 4 dashes pepper
  • 3 tablespoons parsley flakes
  • 1 - medium onion--chopped

How To Make corn chowder

  • Step 1
saute onion in bacon fat for 3-5 minutes
  • Step 2
add to this, 2 cups of whole milk, 2 cups of evaporated milk, 2 cans of creamed corn, salt, pepper and parsley flakes. I use 1 can of evaporated milk which is almost 2 cups, and I pour whole milk to make it two cups.
  • Step 3
cook potatos separately for about 10 minutes
  • Step 4
    drain and add to chowder
  • Step 5
    simmer til ready to eat
