Ingredients
- 1/2 tablespoon butter
- 1/2 tablespoon canola oil
- 1 cup chopped white onions
- 1/2 cup chopped celery
- 1/2 teaspoon ground Himalayan pink salt, or to taste
- 2 large cloves garlic, pressed
- 2 1/4 cups low-sodium chicken broth
- 3 cups frozen peas
- 1 teaspoon dry thyme leaves (substitute 1 tbsp. fresh)
- 1/2 teaspoon freshly ground black pepper (I always use mixed peppercorns), or to taste
- 1/2 cup half-and-half
- 3 slices bacon, cooked and crumbled for garnish
- 1 teaspoon fresh chopped chives, for garnish
How To Make chilled pea soup

Step 1In a saucepan over medium heat, add butter and oil. Add onions and celery; season with salt. Sauté for 5 minutes.

Step 2Add garlic and sauté for 1 minute. Add broth, frozen peas, thyme, and pepper. Stir well and bring to a boil. Reduce heat back to medium and simmer for 5 minutes or until peas are tender, stirring occasionally.

Step 3Remove from the heat and allow to cool, about 30 minutes.

Step 4Transfer the mixture to the jar of a blender. Process until smooth; taste and adjust seasoning if needed.

Step 5Pour in a large bowl and add half-and-half; stir to blend.

Step 6Cover and transfer to the fridge for 4 hours or until very chilled. When ready to serve, we’ll garnish with crumbled bacon and chopped chives.
