Ingredients
- 2 pounds chicken breasts, whole
- 8 -10 cup water
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 medium onion, chopped
- 2 cups celery, chopped
- 2 cups carrots, diced
- 2 cups potatoes, diced
- 2 cups Minute Rice
- 4 - chicken boullion cubes
- 1 pound Velveeta cheese
How To Make cheesy vegetable soup

Step 1Cook chicken in water with salt and pepper for 1 hour. Remove chicken, chop, and return to broth.

Step 2Add onion, celery, carrots, potatoes, rice, and boullion cubes. Cook over low heat for 1 1/2 hours, adding water if needed

Step 3Add cheese and heat until cheese melts.
