This recipe is one my stepmom, Barb, made while we were both trying to lose weight in Scotland. Since we both went to Weight Watchers there, I think she got it from one of the other ladies at a meeting. It is so darn good, you won't know it is lower calorie!

Ingredients

  • 32 ounces california blend frozen vegetables
  • 3 small cans fat free chicken broth
  • 1 can rotel tomatoes
  • 16 ounces sliced frozen carrots (or more california blend)
  • 10 ounces lite velveeta

How To Make cheesy vegetable soup

  • Step 1
    Simmer frozen vegetables in broth 30 min until tender. It will boil. Remove from heat and add Velveeta cubes. If you don't remove from heat, it will curdle.
  • Step 2
    You can increase the vegetables for no extra calories.
