cheesy vegetable soup
This recipe is one my stepmom, Barb, made while we were both trying to lose weight in Scotland. Since we both went to Weight Watchers there, I think she got it from one of the other ladies at a meeting. It is so darn good, you won't know it is lower calorie!

- 32 ounces california blend frozen vegetables
- 3 small cans fat free chicken broth
- 1 can rotel tomatoes
- 16 ounces sliced frozen carrots (or more california blend)
- 10 ounces lite velveeta
How To Make cheesy vegetable soup

Step 1Simmer frozen vegetables in broth 30 min until tender. It will boil. Remove from heat and add Velveeta cubes. If you don't remove from heat, it will curdle.

Step 2You can increase the vegetables for no extra calories.
