Ingredients
- 6 slices thick-cut bacon
- 1-1/2 teaspoon canola oil
- 1/2 cup chopped onion
- 1/2 cup chopped carrots
- 1 - celery stalk, chopped
- 4 cups organic chicken broth
- 4 cups cubed potatoes
- 1/8 teaspoon cayenne pepper
- 1/2 cup reduced-fat, shredded cheddar cheese
- 1/2 teaspoon salt
How To Make cheesy potato-bacon soup

Step 1In lg sauce pan sprayed w/ cooking spray, cook bacon until crisp. Drain bacon on papaer towels. Discard grease.

Step 2Add oil to pan and saute onions, carrots and celery for 4 mins, stirring constantly. Stir in chicken broth, potatoes and cayenne pepper. Bring to a boil.

Step 3Reduce heat to medium and simmer, covered, for 15 mins, or until potatoes are tender. Stir in cheese until melted. Chop bacon and add to soup. Add salt. Stir and cook for 2 mins more.
