cheesy floret soup

This is a delicious vegetable soup made with cauliflower and broccoli and a creamy cheese sauce. I'm not sure where I originally got this recipe but I have been making it for years. This is such a simple and quick soup to make. I enjoy having garlic toast with it. The pictures in this recipe are from where I doubled the batch , that's why it looks like so much more than the serving suggestions.

Ingredients

  • 3 cups broccoli , florets ; fresh
  • 3 cups cauliflower, florets ; fresh
  • 3 sticks celery ribs ; sliced
  • 1 small onion ; chopped
  • 3 cups water
  • 1/2 teaspoon celery salt
  • 3 tablespoons butter
  • 3 tablespoons all purpose flour
  • 2 1/3 cups milk
  • 1 pound processed cheese (velveeta) cubed

How To Make cheesy floret soup

  • Step 1
    In a large sauce pan combine the first 6 ingredients. Bring to a boil; reduce heat. Cover and simmer for 12 - 15 minutes or until vegetables are tender.
  • Step 2
    Mean while in a dutch oven pan melt butter ; stir in flour until smooth.
  • Step 3
    Gradually stir in milk ; bring to a boil.
  • Step 4
    Cook and stir for 2 minutes or until thickened.
  • Step 5
    Reduce heat and add cheese.
  • Step 6
    Cook and stir until the cheese is melted.
  • Step 7
    Drain the vegetables mixture.
  • Step 8
    Add the drained vegetables to the cheese sauce.
  • Step 9
    Stir the vegetable mix into the sauce and heat through.
