cheesy floret soup
This is a delicious vegetable soup made with cauliflower and broccoli and a creamy cheese sauce. I'm not sure where I originally got this recipe but I have been making it for years. This is such a simple and quick soup to make. I enjoy having garlic toast with it. The pictures in this recipe are from where I doubled the batch , that's why it looks like so much more than the serving suggestions.

Ingredients
- 3 cups broccoli , florets ; fresh
- 3 cups cauliflower, florets ; fresh
- 3 sticks celery ribs ; sliced
- 1 small onion ; chopped
- 3 cups water
- 1/2 teaspoon celery salt
- 3 tablespoons butter
- 3 tablespoons all purpose flour
- 2 1/3 cups milk
- 1 pound processed cheese (velveeta) cubed
How To Make cheesy floret soup

Step 1In a large sauce pan combine the first 6 ingredients. Bring to a boil; reduce heat. Cover and simmer for 12 - 15 minutes or until vegetables are tender.

Step 2Mean while in a dutch oven pan melt butter ; stir in flour until smooth.

Step 3Gradually stir in milk ; bring to a boil.

Step 4Cook and stir for 2 minutes or until thickened.

Step 5Reduce heat and add cheese.

Step 6Cook and stir until the cheese is melted.

Step 7Drain the vegetables mixture.

Step 8Add the drained vegetables to the cheese sauce.

Step 9Stir the vegetable mix into the sauce and heat through.
