cheesy cream of broccoli soup

There's nothing like a creamy vegetable soup to soothe the soul during the dark winter. Relatively easy and quick to make. I say relative, because my idea of easy is walking into the restaurant and ordering something! Enjoy!

Ingredients

  • 1 1/2 cups chicken broth
  • 1/4 cup chopped onion
  • 3 cups chopped broccoli
  • 1/2 teaspoon dried thyme
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • Few dash of pepper
  • 1 cup whole milk
  • 4 ounces cubed velveeta

How To Make cheesy cream of broccoli soup

  • Step 1
    In a saucepan combine chicken broth, chopped onions, broccoli and thyme. Bring to a boil, reduce heat, cover and simmer for about 10 minutes. You want the broccoli nice and done.
  • Step 2
    If you have an immersion blender, mix to desired consistency. If not, put the soup in a blender or food processor and blend until desired consistency. You may need to do this in two shifts.
  • Step 3
    Pour into a bowl and set aside.
  • Step 4
    In the same saucepan melt the butter. Stir in flour, salt and pepper, then add the milk all at once. Cook on medium heat until thickened and bubbly, then stir in the blended broccoli mixture.
  • Step 5
    Heat and stir until good and warm, then add the Velveeta. Continue stirring until cheese product is melted.
  • Step 6
    Serve hot and enjoy!
