How to Make Cheesy Cream of Broccoli Soup
1In a saucepan combine chicken broth, chopped onions, broccoli and thyme. Bring to a boil, reduce heat, cover and simmer for about 10 minutes. You want the broccoli nice and done.
2If you have an immersion blender, mix to desired consistency. If not, put the soup in a blender or food processor and blend until desired consistency. You may need to do this in two shifts.
3Pour into a bowl and set aside.
4In the same saucepan melt the butter. Stir in flour, salt and pepper, then add the milk all at once. Cook on medium heat until thickened and bubbly, then stir in the blended broccoli mixture.
5Heat and stir until good and warm, then add the Velveeta. Continue stirring until cheese product is melted.
