Haven't made this in quite some time, but remember it as being quick, easy, and good. Cauliflower is my favorite vegetable, ever.

  • 1 Tbsp
    olive oil
  • 3 Tbsp
  • 1
    head cauliflower, chopped
  • 2
    celery stalks, sliced
  • 1 medium
    onion, chopped
  • 2 Tbsp
    fresh thyme
  • 2 Tbsp
  • 1 qt
    chicken or vegetable broth
  • 1 c
    half and half
  • 3 Tbsp
    chopped fresh parsley
  • 1/2 c
    parmesan, shredded
  • ·
    hot sauce

How to Make Cauliflower Soup


  1. Heat olive oil and butter in soup pot. Season with salt and pepper. Add cauliflower, celery, onion, and thyme. Saute over medium heat until onion is translucent. Add flour and stir. Mix in broth and half and half. Simmer 15 minutes.
  2. Serve with parmesan, parsley, and hot sauce as garnishes.
