- 1 pound carrots
- 4 pinches ground black pepper
- 3 cups low-sodium chicken broth
- 2 cups coconut milk, unsweetened
- 3 tablespoons sambal oelek
- 4 dashes srircha hot chili sauce
- 2 sprigs fine chop freash cilantro
- 3 slices white onions
How To Make carrot coconut soup

Step 1In a large sauce pan, melt butter, add carrots and onions season with pepper and salt, add coconut milk, bring to boil stir in chicken broth and samkbal oelek. When carrots are tender transfer to blender.. After blending you can re-heat soup, top with sriracha and top with cilantro

Step 2This soup Add more carrots and more broth if serving more then 4 the more coconut milk you add the lighter the soup. and the least amount of coconut milk the darker the soup.
