I found this recipe in the Taste of Home Ground Beef cookbook (I think the original title is Calico Main Dish Soup). I tried it and really liked it! The golden mushroom soup and rice make it different from other vegetable beef soups.

Ingredients
- 1 1/2 pounds ground beef
- 1/2 cup green pepper, chopped
- 1/3 cup onion, chopped
- 2 tablespoons chili powder
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 2 cans golden mushroom soup, undiluted
- 1 1/3 cups water
- 1 can diced tomatoes, undrained
- 1 can whole kernel corn, drained
- 1 can cut green beans, drained
- 1 cup instant rice, uncooked
- 1 to 2 cups tomato juice, optional
How To Make calico soup

Step 1In a large pot, cook ground beef until no longer pink, drain. Add green pepper, onion, chili powder, salt and cumin. Cook and stir over medium heat for 5 minutes.

Step 2Add soups, water, tomatoes, corn, green beans and rice. Bring to boil. Reduce heat and simmer, uncovered, for 20 minutes, stirring occasionally. Can be thinned with tomato juice (I always thin it somewhat)
