growing up in northern michigan... having soups in the fall and winter were a must... and this is good way to get veggies in ya...

Ingredients

  • 2 pounds bag frozen broccolli flowerettes
  • 1/2 pound smoked sausage
  • 1 medium yellow onion,chopped fine
  • 1 - stalk celery,chopped fine
  • 1 can beef broth, reduced sodium
  • 1 can [fill broth can] milk
  • 1 pinch garlic

How To Make broccolli soup

  • Step 1
    put beef broth in med/lg sauce pan bring to boil... reduce heat... add broccolli.... cook 5-10 minutes.. add celery and onion cook 10 minutes more
  • Step 2
    let cool some... pour into food processor.... blend til smooth... while doing broccolli... add smoked sausage to pan cook and brown over med high heat...watch close do not burn...
  • Step 3
    return broccolli mix to pan add milk heat til hot... add what ever spices you like... i like garlic added to this soup... serve it with garlic toast
