Ingredients

  • 2 tablespoons olive oil
  • 2 bunches scallions, chopped
  • 2 bunches broccolini, trimmed and chopped
  • 4 cloves garlic, minced
  • 6 cups vegetable stock
  • salt and pepper
  • 1/2 cup creme fraiche or sour cream
  • fresh chives for garnish

How To Make broccolini and scallion soup

  • Step 1
    In a large Dutch oven add the olive oil and scallions. Cook about 5 minutes. Add the garlic and broccolini and cook 2 minutes. Add the stock and bring to a boil. Reduce to a simmer and simmer for 20 minutes.
  • Step 2
    Add the soup to a food processor in batches and process until as smooth as possible. Add back to a clean pan. Bring to a boil again. Reduce to a simmer and simmer for 5 minutes.
  • Step 3
    Taste and season with salt and pepper. Top with creme fraiche or sour cream and chives.
