Ingredients
- 1 tablespoon butter
- 1 medium carrot small dice
- 1 medium onion small dice
- 3 cloves garlic minced
- 5 tablespoons butter
- 2 cups chicken stock
- 1/4 cup flour
- 2 cups heavy cream
- 1 cup milk
- 1 large head sweet baby broccoli cut into florets.
- 8 ounces cabots seriously sharp white cheddar cheese
- - salt and pepper to taste
- - good quality olive oil for serving
How To Make broccoli & sharp white cheddar soup

Step 1In a saucepan melt the 1 tbsp butter. Saute the onion, carrots, and garlic until softened. set aside. Blanch the broccoli in salted boiling water for 2 minutes then drain set aside.

Step 2In a large pot melt the 5 tbsp butter and whisk in the flour cook 3 minutes. Add the chicken stock and bring to a boil. Slowly add in the milk and heavy cream. Cook until thickened then add in the shredded sharp cheese. Cook until melted. Stir in the onion mixture and broccoli. Cook 2 more minutes. Taste and adjust for salt and pepper. Serve dotted with a little good quality olive oil
