Taking this to a new level with the sweet baby broccoli, Seriously sharp cheddar cheese and garnishing with Olive oil. Really delicious

Ingredients

  • 1 tablespoon butter
  • 1 medium carrot small dice
  • 1 medium onion small dice
  • 3 cloves garlic minced
  • 5 tablespoons butter
  • 2 cups chicken stock
  • 1/4 cup flour
  • 2 cups heavy cream
  • 1 cup milk
  • 1 large head sweet baby broccoli cut into florets.
  • 8 ounces cabots seriously sharp white cheddar cheese
  • - salt and pepper to taste
  • - good quality olive oil for serving

How To Make broccoli & sharp white cheddar soup

  • Step 1
    In a saucepan melt the 1 tbsp butter. Saute the onion, carrots, and garlic until softened. set aside. Blanch the broccoli in salted boiling water for 2 minutes then drain set aside.
  • Step 2
    In a large pot melt the 5 tbsp butter and whisk in the flour cook 3 minutes. Add the chicken stock and bring to a boil. Slowly add in the milk and heavy cream. Cook until thickened then add in the shredded sharp cheese. Cook until melted. Stir in the onion mixture and broccoli. Cook 2 more minutes. Taste and adjust for salt and pepper. Serve dotted with a little good quality olive oil
