broccoli, potato, and cheese soup
My daughter LOVES soup. This is her favorite, she asks for this just about every week. This is a hearty soup, it is REALLY good when served in a warm bread bowl.

Ingredients
- 4 tablespoons butter
- 4 tablespoons flour
- 5 cups vegetable stock
- 3 cups potatoes diced (1/2 in cubes)
- 3 cups broccoli florets (i like to chopped mine)
- 1 cup heavy cream
- 3 cups cheddar cheese, grated
- 1 teaspoon salt
- 1/2 teaspoon black peppper
How To Make broccoli, potato, and cheese soup

Step 1Make a roux. Begin by melting butter in a small saucepan over low heat. Add flour and whisk constantly for 3 minutes. Set aside.

Step 2In a large stock pot, combine stock and potatoes. Bring to a boil then reduce heat and simmer 20 minutes.

Step 3Whisk in roux and stir constantly until soup has thickened.

Step 4Add broccoli and simmer for 10 minutes.

Step 5Add remaining ingredients and heat over low heat for 10 minutes, stirring constantly.

Step 6Server with some warm bread or even in a bread bowl. Makes for a great meal.
