My daughter LOVES soup. This is her favorite, she asks for this just about every week. This is a hearty soup, it is REALLY good when served in a warm bread bowl.

Ingredients

4 Tbsp
butter
4 Tbsp
flour
5 c
vegetable stock
3 c
potatoes diced (1/2 in cubes)
3 c
broccoli florets (i like to chopped mine)
1 c
heavy cream
3 c
cheddar cheese, grated
1 tsp
salt
1/2 tsp
black peppper

How to Make Broccoli, Potato, and Cheese Soup

Step-by-Step

  • 1Make a roux. Begin by melting butter in a small saucepan over low heat. Add flour and whisk constantly for 3 minutes. Set aside.
  • 2In a large stock pot, combine stock and potatoes. Bring to a boil then reduce heat and simmer 20 minutes.
  • 3Whisk in roux and stir constantly until soup has thickened.
  • 4Add broccoli and simmer for 10 minutes.
  • 5Add remaining ingredients and heat over low heat for 10 minutes, stirring constantly.
  • 6Server with some warm bread or even in a bread bowl. Makes for a great meal.
