My daughter LOVES soup. This is her favorite, she asks for this just about every week. This is a hearty soup, it is REALLY good when served in a warm bread bowl.

Ingredients

  • 4 Tbsp
    butter
  • 4 Tbsp
    flour
  • 5 c
    vegetable stock
  • 3 c
    potatoes diced (1/2 in cubes)
  • 3 c
    broccoli florets (i like to chopped mine)
  • 1 c
    heavy cream
  • 3 c
    cheddar cheese, grated
  • 1 tsp
    salt
  • 1/2 tsp
    black peppper

How to Make Broccoli, Potato, and Cheese Soup

Step-by-Step

  1. Make a roux. Begin by melting butter in a small saucepan over low heat. Add flour and whisk constantly for 3 minutes. Set aside.
  2. In a large stock pot, combine stock and potatoes. Bring to a boil then reduce heat and simmer 20 minutes.
  3. Whisk in roux and stir constantly until soup has thickened.
  4. Add broccoli and simmer for 10 minutes.
  5. Add remaining ingredients and heat over low heat for 10 minutes, stirring constantly.
  6. Server with some warm bread or even in a bread bowl. Makes for a great meal.
