broccoli, potato, and cheese soup

My daughter LOVES soup. This is her favorite, she asks for this just about every week. This is a hearty soup, it is REALLY good when served in a warm bread bowl.

Ingredients

  • 4 tablespoons butter
  • 4 tablespoons flour
  • 5 cups vegetable stock
  • 3 cups potatoes diced (1/2 in cubes)
  • 3 cups broccoli florets (i like to chopped mine)
  • 1 cup heavy cream
  • 3 cups cheddar cheese, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black peppper

How To Make broccoli, potato, and cheese soup

  • Step 1
    Make a roux. Begin by melting butter in a small saucepan over low heat. Add flour and whisk constantly for 3 minutes. Set aside.
  • Step 2
    In a large stock pot, combine stock and potatoes. Bring to a boil then reduce heat and simmer 20 minutes.
  • Step 3
    Whisk in roux and stir constantly until soup has thickened.
  • Step 4
    Add broccoli and simmer for 10 minutes.
  • Step 5
    Add remaining ingredients and heat over low heat for 10 minutes, stirring constantly.
  • Step 6
    Server with some warm bread or even in a bread bowl. Makes for a great meal.
