Ingredients

  • 3 c
    vegetable stock
  • 4 c
    broccoli florets, chopped
  • 1 c
    onion, chopped
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 2 clove
    garlic, minced
  • 3 oz
    half and half
  • 4 oz
    cheddar cheese, shredded
  • 1/4 c
    fresh chopped parsley (optional)

How to Make Broccoli Cheese Soup

Step-by-Step

  1. Combine vegetable stock, broccoli, onion, salt, pepper and garlic in a large saucepan. Bring to a boil, reduce heat and simmer until broccoli is tender.
  2. Turn off heat. Mix soup with hand blender (or pour into a blender) until smooth. Immediately stir in half and half, cheese and parsley, then serve.
  3. *This isn't a thick cheese soup. The broth is on the thinner side, but absolutely delicious! Very flavorful.
