This soup is very quick and easy to put together, and very tasty! Give it a try yourself! :D

Ingredients

  • 3 cups vegetable stock
  • 4 cups broccoli florets, chopped
  • 1 cup onion, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic, minced
  • 3 ounces half and half
  • 4 ounces cheddar cheese, shredded
  • 1/4 cup fresh chopped parsley (optional)

How To Make broccoli cheese soup

  • Step 1
    Combine vegetable stock, broccoli, onion, salt, pepper and garlic in a large saucepan. Bring to a boil, reduce heat and simmer until broccoli is tender.
  • Step 2
    Turn off heat. Mix soup with hand blender (or pour into a blender) until smooth. Immediately stir in half and half, cheese and parsley, then serve.
  • Step 3
    *This isn't a thick cheese soup. The broth is on the thinner side, but absolutely delicious! Very flavorful.
