Ingredients
- 3 cups vegetable stock
- 4 cups broccoli florets, chopped
- 1 cup onion, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cloves garlic, minced
- 3 ounces half and half
- 4 ounces cheddar cheese, shredded
- 1/4 cup fresh chopped parsley (optional)
How To Make broccoli cheese soup

Step 1Combine vegetable stock, broccoli, onion, salt, pepper and garlic in a large saucepan. Bring to a boil, reduce heat and simmer until broccoli is tender.

Step 2Turn off heat. Mix soup with hand blender (or pour into a blender) until smooth. Immediately stir in half and half, cheese and parsley, then serve.

Step 3*This isn't a thick cheese soup. The broth is on the thinner side, but absolutely delicious! Very flavorful.
