Broccoli Cheese Soup
3 cvegetable stock
4 cbroccoli florets, chopped
1 conion, chopped
2 clovegarlic, minced
3 ozhalf and half
4 ozcheddar cheese, shredded
1/4 cfresh chopped parsley (optional)
How to Make Broccoli Cheese Soup
- Combine vegetable stock, broccoli, onion, salt, pepper and garlic in a large saucepan. Bring to a boil, reduce heat and simmer until broccoli is tender.
- Turn off heat. Mix soup with hand blender (or pour into a blender) until smooth. Immediately stir in half and half, cheese and parsley, then serve.
